Had no muffin cups so just sprayed the pan with Pam Butter flavored spray. I added a very small amount of Original Mrs. Dash to this. And ate 1/4 of an apple with it. I was still a little hungry so I am asking this......why can't we eat two? It'd pretty low on everything that I can tell. Just curious is all. Dietitian comment: Although the portion is 1 muffin you could certainly eat 2 muffins and still be in the 'kidney-friendly' zone.

I think that bacon and mushrooms are forbitten in a kidney friendly diet.Dietitian comment: It is the amount you have that matters. Each serving has 1/2 slice low sodium bacon and 1 teaspoon mushrooms. If you want to avoid these items the recipe will still work without them. Take a look at the nutrients per serving--each serving is quite low in the nutrients of concern.

Baked Egg Cups

I made this and was great but they stuck to the liners. What dis I do. Wrong? Dietitian comment: Perhaps you could skip the liner and spray the muffin tin with nonstick cooking spray instead.

I enjoyed this immensely. My favorite item was the bacon. I would recommend using liners. Less clean up and easy to heat in the microwave. I placed the remaining in the freezer for when I don't have time to fix breakfast.
