sounds delicious but, I am on a low potassium and low phosphorous potassium is 3.7mmol/L and alkaline phosphate is 94U/L. The list I have for low phosphorus is from 0-100, medium phosphorus is the omelet is 247mg of potassium, 148mg of phosphorous...both in medium...not sure if it's safe for me.. Dietitian comment: Another way to evaluate a recipe is to divide your total daily allowance by your meals and snacks and then see how it 'fits'. For example if you are allowed 1,ooo mg phosphorus a day and have 300 mg for each meal and 100 mg for snacks you can easily include this recipe plus some low potassium fresh fruit and a slice of toast with jam.
